1/3 Cup shortening
1 1/3 Cup white sugar
1 1/2 cups grated zucchini
1/3 Cup of water
1 teaspoon vanilla extract
1 2/3 Cup all purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon baking powder
1 teaspoon of pumpkin pie spice
1/3 Cup chopped walnuts
3 tablespoons unsweetened cocoa powder
1/3 Cup semi-sweet chocolate chips
1.Preheat the oven to 350 degrees Fahrenheit (175 degrees Celsius). Grease one 9-by-5-inch bread pan.
2.In a large bowl, cream shortened and sugar together. Mix with the eggs. Add the zucchini, water and vanilla and mix. Mix the flour, baking soda, salt, baking powder, and spices for the pumpkin pie. Add the nuts.
3.Divide the dough in half and add cocoa powder and chocolate chips to one of the halves. Pour the plain dough into the bottom of the bread pan. Pour the chocolate batter over the regular batter.
4.Bake until a wooden Pick inserted in the center comes out clean, about 1 hour. Cool for 10 minutes and remove from the pan. Store in the refrigerator.
